Preparing the Marinade:
Marinade is what will make or break the taste of your grilled chicken. So follow the steps carefully
First, pour the olive oil to the mixer
To this add juice of 1 lemon
Next, add chili flakes and Oregano
Add Garlic cloves to the mix
Add a quarter teaspoon of brown sugar
Add one teaspoon of whole ground mustard and half teaspoon of black pepper and salt
Grind all the ingredients so that all are emulsified in a homogeneous mixture.
To give the marinate an extra herby flavor, add one fourth cup parsley leaves to the mix and grind it again.
Now it’s time to pour the marinade to the chicken
Process
Step 1: Pour the marinade all over the chicken making sure that the chicken is really well coated in the marinade.
Step 2: Cover the marinated chicken with a cling film and keep it in the refrigerator for at least 30 minutes to 2 hours. It is important to give the marinated chicken minimum of thirty minutes to get the juicy flavor of the marinade.
Step 3: After the chicken is marinated well, take it out from the fridge, put your induction oven on medium heat and add the chicken breast pieces on the grill pan one by one.
Since oil is already present in the marinade prepared earlier, there is no need to put oil again on the grill pan.
Step 4: Allow the chicken to grill for at least 4 minutes on one side. As a visual cue, you can see the sides of the chicken is cooked while it is still raw in the center which means it’s time to flip it over.
Step 5: Let it cook on the other side also for 3-4 minutes
Take out the grilled chicken breasts from the pan to a plate and allow them to rest for a while.
Garnish with some parsley and lemon pieces and your easy grilled chicken on an induction cooktop is ready to serve.
Note: You can use garlic butter and less olive oil if you like it that way. Also, if you don’t have brown sugar, you can use honey instead of it for marination.
Tip: While pounding the chicken pieces, put a cling film over the chicken, to avoid splashing chicken bits all over the place.
